Chickpea Curry


Hello and Happy Friday! Happy Spring to you, too!

Although it's Spring, it most certainly doesn't feel like it. It was freezing cold yesterday and snowed and all I wanted for dinner was a warm and spicy meal. I found a delicious recipe from the BBC for chickpea curry and I knew that I needed to make this for dinner! A quick trip to the grocery store and I was ready to bring this recipe to life. I hope you'll try this dish soon...it was so flavorful, filling and delicious!

Chickpea Curry
adapted from Manju Malhi's recipe on BBC Food

Ingredients:
Olive oil cooking spray
1 onion, chopped
1 garlic clove, chopped
1/4 teaspoon salt
1/2 teaspoon cumin powder
1/4 teaspoon coriander powder
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
3/4 cup chopped cherry tomatoes
1 can (14 oz) chickpeas, rinsed and drained
2 inch piece of ginger root, grated
pinch of garam masala

Instructions:
1. Heat a large pan and spray with olive oil cooking spray. Saute onions and garlic until caramelized.

2. Add salt, cumin, coriander, turmeric and red chili powders. Mix for a minute and then add in the chopped tomatoes. Cook mixture until it begins to thicken.

3. Add 1/4 cup water and stir. Add chickpeas and mix. Add another 1/4 cup water and cover mixture and let it simmer for five minutes. Add ginger and garam masala.

4. At this point, the dish is ready to serve, but I love my chickpeas pureed, so I put 3/4 of the cooked mixture into my mini food processor and let it run until the mixture was roughly pureed. I added the pureed mixture to the remaining 1/4 of the chickpea mixture and stirred to combined.

5. Serve by itself or with pita wedges or rice. I enjoyed it without any accompaniments and it was delicious! Store leftovers in the refrigerators and heat on stove or in microwave to warm before serving.

Recent Loves

Hello and Happy Tuesday! I'm in the midst of a crazy week of midterms (I have four!) but I'm thrilled because my Spring Break is next week and I can soon RELAX! Woohoo! I've been thinking about sharing a few near and dear to me items with you and I thought that a study break would be the perfect opportunity to do so! Without further ado, here's a list of things that have been making my life so much sweeter these days :-).

The pool where I swim is an absolute lifesaver...100 laps feels so refreshing after a long week of school and work!

This balm has literally saved my lips from the cold...it's not flavored or gummy and it makes your lips feel so good.

And this Aveeno cream is perfect to use before bed...I put it on at night and wake up to oh-so-soft hands...it's wonderful!
This is my first eye cream and I've only been using it for a week, but I'm totally hooked. I figured that I better start the anti-aging treatment early.

Speaking of beauty products, this Bobbi Brown blush is by far, my most favorite blush in the entire world. I know I'm young, but I've tried so many different hues and this one really makes my cheeks pop in an "I just walked in from the cold" kind of way. Trust me, it's perfect. It's definitely a keeper.

I love drinking decaf coffee after dinner while I'm studying or catching up on my New Yorker, WSJ, or NYTimes reading. I stumbled upon this delightful decaf after running out of my Melitta supply. I'm so happy that I discovered this! It's not bitter like traditional french roast coffees, but it does have lots of flavor. I love it!

Wanderlust

To me, there's nothing better than dreaming up future travel destinations. I keep a running list of the places I'd love to see and on difficult days, I remind myself of the vastness of the earth and the endless possibilities for exploration. It's both a comfort and an obstacle to think of all of the countries, cultures, timezones, mountains, and cities that one can explore.
 
I came across a new-to-me tumblr and it was love at first site. So many undescribable feelings creep into me when I look at all of these photos and read these quotes. I'm sure it sounds immensely cheesy and cliche, but these images truly do take me to a totally different place. What a wonderful escape?!
